Hand harvested from 40 years old vineyards planted by the traditional system at a very dry area with calcareous clay and ferrous soils

Recomended serving temperature at 17º C (63F).

VINEYARD CHARACTERISTICS

Made with grapes from old dry-land vineyards over 30 years old, cultivated by the traditional system on the slopes of the Iberian Range, in arid, ferrous clay soil.

DATE HARVESTED: Manual, in the 2nd and 3rd week of October.

PROCESS: Traditional method. Cold maceration for about 12 hours. Controlled alcoholic fermentation between 26 – 28ºC in stainless steel tanks. The maceration of the skin with the must takes for about ten days, until the end of the fermentation. It stays two more days in maceration without pumping and then it is bleeded and pressed. The malolactic fermentation is carried out in the tanks.

AGEING: Aged in French Oak barrels for three months, in order to complex the wine and enhance its fruity and floral character.

TASTING:

Colour.- Intense cherry red color with violet tones, very clean and bright appearance.

Aroma.- High intensity, fruity and floral aroma with a marked varietal character. Very subtle tones of spices and red fruits and a light toasted oak aroma.

Palate.- First start is very fruity and fresh, with volume and fleshiness, balanced. Very long aftertaste in which fruit and spicy notes reappear through the retronasal. Well balanced and harmonious in the mouth, showing ripe fruit (cherry, blackberry, etc…). It is very enjoyable, and it has a long and persistent aftertaste.

SERVE AT: 16ºC.
